FINDING 107

The barrel was sampled at a range of proofs: 120, 114, 110, 107, 104, 100, and 95. Each revealed something different as water reshaped the whiskey, quieting some characteristics while allowing others to emerge. But among them, one stood out.

107 proof.

It struck the balance the Keeper was looking for, preserving the character and intensity of the barrel while allowing more of the grape, caramel, and vanilla to step forward. Of all the proofs explored, 107 was the one that earned a bottle of its own.

Proofing the Grape Brandy Barrel to 107 revealed another side of the whiskey. The lower proof released more sweetness and grape character while still maintaining some of the explosive profile of the cask-strength expressions. The result became Welch's Antique 107: recognizably descended from Grape Awakening, but with its own balance and voice.
